Browned Butter Shrimp Scampi

Shrimp Scampi is a beloved classic, and for good reason. The combination of juicy shrimp, garlic, and buttery pasta creates a symphony of flavors that’s hard to resist.

Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 8 oz spaghetti or linguine
  • 4 tbsp unsalted butter
  • 3 cloves garlic minced
  • ½ cup dry white wine or chicken broth
  • 2 tbsp olive oil
  • 1 lemon juiced and zested
  • ¼ cup fresh parsley chopped
  • ½ tsp red pepper flakes optional
  • Salt and black pepper to taste

Instructions
 

  • Bring a pot of salted water to a boil and cook pasta until al dente. Reserve ½ cup of pasta water and drain.
  • Pat shrimp dry, season with salt and pepper, and sauté in olive oil over medium heat for 2-3 minutes per side. Remove and set aside.
  • In the same skillet, melt butter over medium heat until golden brown and nutty.
  • Add garlic to the browned butter and cook for 30 seconds until fragrant.
  • Deglaze the pan with white wine or chicken broth, scraping up browned bits. Let simmer for 2-3 minutes.
  • Return shrimp to the skillet and toss in the sauce. Add cooked pasta, reserved pasta water, lemon juice, and zest. Toss to combine.
  • Sprinkle with parsley and red pepper flakes (if using). Adjust seasoning and serve immediately.
