Browned Butter Shrimp Scampi
Shrimp Scampi is a beloved classic, and for good reason. The combination of juicy shrimp, garlic, and buttery pasta creates a symphony of flavors that’s hard to resist.
1 lb large shrimp peeled and deveined 8 oz spaghetti or linguine 4 tbsp unsalted butter 3 cloves garlic minced ½ cup dry white wine or chicken broth 2 tbsp olive oil 1 lemon juiced and zested ¼ cup fresh parsley chopped ½ tsp red pepper flakes optional Salt and black pepper to taste
Bring a pot of salted water to a boil and cook pasta until al dente. Reserve ½ cup of pasta water and drain.
Pat shrimp dry, season with salt and pepper, and sauté in olive oil over medium heat for 2-3 minutes per side. Remove and set aside.
In the same skillet, melt butter over medium heat until golden brown and nutty.
Add garlic to the browned butter and cook for 30 seconds until fragrant.
Deglaze the pan with white wine or chicken broth, scraping up browned bits. Let simmer for 2-3 minutes.
Return shrimp to the skillet and toss in the sauce. Add cooked pasta, reserved pasta water, lemon juice, and zest. Toss to combine.
Sprinkle with parsley and red pepper flakes (if using). Adjust seasoning and serve immediately.
