Ingredients
  

  • 4 large portobello mushroom caps 🍄
  • 2 ripe tomatoes diced 🍅
  • 1 cup fresh mozzarella cheese shredded or in small chunks 🧀
  • 1/4 cup fresh basil leaves chopped 🌿
  • 2 tbsp balsamic glaze or reduction 🍇
  • 1 tbsp olive oil 🫒
  • Salt and freshly ground black pepper to taste 🧂
  • 1 tbsp garlic minced (optional) 🧄
  • For Garnishing:
  • Extra basil leaves for garnish 🌿
  • Extra balsamic glaze for drizzling 🍇

Instructions
 

  • 1️⃣ Prepare the Mushrooms:
  • Remove the stems from the portobello mushrooms and scrape out the gills with a spoon. Wipe the caps clean with a damp cloth.
  • 2️⃣ Prepare the Filling:
  • In a bowl, combine diced tomatoes, mozzarella cheese, chopped basil, and garlic (optional). Season with salt and pepper to taste and mix well.
  • 3️⃣ Stuff the Mushrooms:
  • Drizzle olive oil over the mushroom caps and season with salt and pepper. Stuff each mushroom cap with the tomato-mozzarella mixture, pressing gently.
  • 4️⃣ Bake the Mushrooms:
  • Preheat your oven to 375°F (190°C). Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, until the mushrooms are tender and the cheese is melted.
  • 5️⃣ Garnish and Serve:
  • Remove from the oven, drizzle with balsamic glaze, and garnish with fresh basil leaves. Serve immediately.
