Cheesy Chicken Broccoli Rice is the ultimate comfort food—a warm, creamy, and flavorful dish that combines tender chicken, vibrant broccoli, and fluffy rice in a blanket of rich, melted cheese.

Instructions
Heat olive oil in a large skillet or pot over medium heat. Add diced chicken and season with garlic powder, onion powder, paprika, salt, and pepper. Cook for 5–7 minutes until golden and fully cooked. Remove and set aside.
In the same pot, add uncooked rice and chicken broth. Stir to scrape up any browned bits for added flavor. Bring to a boil, then reduce heat to low. Cover and simmer for 10–15 minutes until rice is nearly tender.
Stir in broccoli florets, cover again, and cook for another 5 minutes until broccoli is tender and rice is fully cooked.
Return cooked chicken to the pot. Add heavy cream, shredded cheddar, and Parmesan cheese. Stir until cheese is melted and the mixture is creamy. Adjust seasoning if needed.
Remove from heat and let sit for 2 minutes. Garnish with parsley or extra cheese before serving. Enjoy!
