Ingredients
  

  • 2 cups cooked and shredded chicken grilled or rotisserie
  • 1/3 cup Caesar dressing store-bought or homemade
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon lemon juice
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder optional
  • 8 large romaine or butter lettuce leaves
  • 1/3 cup croutons crushed (optional for crunch)
  • Fresh parsley or extra Parmesan for garnish

Instructions
 

  • If using fresh chicken, grill or bake it until fully cooked, then shred or slice into bite-sized pieces.
  • If using rotisserie chicken, remove the skin and shred the meat.
  • In a bowl, combine shredded chicken, Caesar dressing, Parmesan cheese, lemon juice, black pepper, and garlic powder.
  • Toss until the chicken is evenly coated.
  • Lay out lettuce leaves on a serving plate.
  • Spoon the Caesar chicken mixture evenly into each lettuce cup.
  • Sprinkle with crushed croutons (if using) and extra Parmesan cheese.
  • Garnish with fresh parsley or an extra drizzle of Caesar dressing.
  • Serve fresh with lemon wedges on the side for added zest.
