Chicken Pasta Salad

For the Salad: 2 cups cooked chicken breast diced or shredded (grilled, baked, or rotisserie) 3 cups rotini or penne pasta cooked and cooled 1 cup cherry tomatoes halved 1 cup cucumber sliced 1/2 cup red bell pepper diced 1/4 cup red onion thinly sliced 1/4 cup black olives sliced (optional) 1/4 cup grated Parmesan cheese 2 tablespoons fresh parsley or basil chopped For the Dressing: 1/3 cup olive oil 3 tablespoons red wine vinegar or lemon juice 2 tablespoons Dijon mustard 1 tablespoon honey 1 teaspoon dried oregano 1 teaspoon garlic powder Salt and pepper to taste
Cook the Pasta Bring a pot of salted water to a boil.
Add the rotini or penne pasta and cook according to package instructions until al dente.
