Chicken Taco Casserole

Ingredients
  

For the Casserole:

  • 2 cups cooked chicken (shredded or diced, rotisserie chicken works well)
  • 1 can (10 oz)  diced tomatoes with green chilies (like Rotel)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup frozen corn (or fresh corn kernels)
  • 1 packet taco seasoning (or homemade seasoning)
  • 1 cup sour cream
  • 1 cup salsa (choose your desired heat level)
  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a cheese blend)
  • 1/2 cup crushed tortilla chips (optional, for topping)
  • 1 tablespoon olive oil (for cooking)
  • Salt and pepper to taste

Optional Toppings:

  • Chopped green onions
  • Sliced jalapeños
  • Fresh cilantro
  • Guacamole or avocado slices
  • Extra sour cream

Instructions
 

Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

Prepare the Chicken:

  • Shred or chop the cooked chicken into bite-sized pieces. Rotisserie chicken works great for this recipe.

Sauté the Veggies:

  • Heat 1 tablespoon of olive oil in a medium pan over medium heat. Add the diced tomatoes with green chilies, black beans, and frozen corn. Season with salt, pepper, and half of the taco seasoning. Stir well and cook for about 3-4 minutes until everything is heated through.

Mix the Chicken and Other Ingredients:

  • In a large bowl, combine the shredded chicken, sautéed vegetable mixture, sour cream, salsa, and the remaining taco seasoning. Stir everything together until fully combined.

Assemble the Casserole:

  • Transfer the chicken mixture into a greased 9x13-inch baking dish. Spread it evenly, then top with the shredded cheese.

Bake the Casserole:

  • Place the casserole in the oven and bake for 20 minutes, or until the cheese is melted and bubbly.

Optional Crunchy Topping:

  • For added crunch, sprinkle 1/2 cup of crushed tortilla chips over the casserole during the last 5 minutes of baking.

Serve and Garnish:

  • Once baked, remove the casserole from the oven and allow it to cool for a few minutes. Garnish with chopped green onions, fresh cilantro, jalapeños, or a dollop of sour cream.
