Season the Salmon:
Season the salmon fillets with salt and pepper on both sides.
Sear the Salmon:
In a large skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets and cook for 4-5 minutes per side until golden brown and cooked through. Remove the salmon from the skillet and set it aside.
Make the Garlic Sauce:
In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 1-2 minutes, until fragrant and golden. Be careful not to burn the garlic.
Add the Liquid Ingredients:
Pour in the heavy cream and chicken broth. Stir to combine and bring to a simmer. Add the chopped sun-dried tomatoes, Parmesan cheese, and Italian seasoning. Cook for 3-4 minutes, allowing the sauce to thicken slightly.
Add the Spinach:
Stir in the spinach and cook for 2-3 minutes until wilted and incorporated into the sauce.
Return the Salmon:
Gently return the seared salmon fillets to the skillet. Spoon the creamy sauce over the salmon and let it simmer for another 2-3 minutes to heat through.
Garnish and Serve:
Garnish with freshly chopped parsley and serve immediately. Enjoy with pasta, rice, or a side of veggies!
