Creamy Garlic Tuscan Salmon Recipe

This recipe combines perfectly seared salmon fillets with a rich, creamy garlic sauce infused with sun-dried tomatoes, spinach, and Parmesan cheese.

Ingredients
  

  • 4 salmon fillets about 6 oz each
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tbsp fresh parsley chopped (for garnish)

Instructions
 

  • Season the Salmon:
  • Season the salmon fillets with salt and pepper on both sides.
  • Sear the Salmon:
  • In a large skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets and cook for 4-5 minutes per side until golden brown and cooked through. Remove the salmon from the skillet and set it aside.
  • Make the Garlic Sauce:
  • In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 1-2 minutes, until fragrant and golden. Be careful not to burn the garlic.
  • Add the Liquid Ingredients:
  • Pour in the heavy cream and chicken broth. Stir to combine and bring to a simmer. Add the chopped sun-dried tomatoes, Parmesan cheese, and Italian seasoning. Cook for 3-4 minutes, allowing the sauce to thicken slightly.
  • Add the Spinach:
  • Stir in the spinach and cook for 2-3 minutes until wilted and incorporated into the sauce.
  • Return the Salmon:
  • Gently return the seared salmon fillets to the skillet. Spoon the creamy sauce over the salmon and let it simmer for another 2-3 minutes to heat through.
  • Garnish and Serve:
  • Garnish with freshly chopped parsley and serve immediately. Enjoy with pasta, rice, or a side of veggies!
