Crispy Baked Shrimp Scampi

Ingredients
  

  • 1 1/2 lbs large shrimp peeled and deveined, tails on or off
  • 3 tbsp unsalted butter melted
  • 3 cloves garlic minced
  • 1 tbsp lemon juice
  • 1/2 tsp red pepper flakes optional
  • Salt and pepper to taste

For the crispy topping:

  • 3/4 cup panko breadcrumbs
  • 2 tbsp Parmesan cheese grated
  • 2 tbsp fresh parsley chopped
  • 1 tbsp olive oil

Optional garnish:

  • Lemon wedges
  • Additional parsley

Instructions
 

  • Preheat the oven to 375°F (190°C). Grease a baking dish or ovenproof skillet.
  • In a bowl, toss shrimp with melted butter, garlic, lemon juice, red pepper flakes (if using), salt, and pepper. Arrange shrimp in a single layer in the prepared dish.
  • In a separate bowl, combine breadcrumbs, Parmesan, parsley, and olive oil. Mix until breadcrumbs are evenly coated.
  • Sprinkle breadcrumb mixture evenly over the shrimp, covering each piece.
  • Bake for 12-15 minutes, or until shrimp are pink and opaque, and topping is golden brown.
  • For an extra crispy topping, broil for the last 2 minutes, keeping a close eye on it to prevent burning.
  • Garnish with parsley and serve with lemon wedges. Enjoy!
