Crock Pot Fiesta Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 packet taco seasoning
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces corn, drained
  • 1 can 10 ounces diced tomatoes with green chilies (e.g., Rotel)
  • 8 ounces cream cheese cubed
  • 1 cup shredded cheddar cheese optional, for topping
  • Fresh cilantro chopped (for garnish)

Instructions
 

  • Prepare the crock pot: Lightly grease the inside of the crock pot to prevent sticking.
  • Layer ingredients: Place the chicken breasts in the crock pot. Sprinkle taco seasoning over the chicken. Add black beans, corn, and diced tomatoes on top.
  • Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
  • Add cream cheese: About 30 minutes before the cooking time ends, add cubed cream cheese to the crock pot. Cover and let it melt.
  • Shred chicken: Using two forks, shred the chicken directly in the crock pot. Stir well to combine everything into a creamy mixture.
  • Optional toppings: Sprinkle shredded cheddar cheese on top and let it melt. Garnish with chopped cilantro before serving.
  • Serve and enjoy: Serve over rice, in tacos, or with tortilla chips for a delicious meal.
