Grease the Crockpot. Layer sliced potatoes and top with cheese sauce mixture (sour cream, soup, melted butter, garlic powder, onion powder, salt, and pepper).
Repeat layers until ingredients are used up.
Cover and cook on low for 4-6 hours, until potatoes are fork-tender.
Sprinkle shredded cheddar cheese on top and cook for an additional 15-20 minutes to melt the cheese.
Stir and garnish with green onions (optional) before serving.
