Crockpot Tuscan Chicken is a creamy, flavorful dish that combines tender chicken with a rich sauce made from cream, sun-dried tomatoes, garlic, and spinach.
4 boneless skinless chicken breasts 1 teaspoon salt 1 teaspoon black pepper 1 teaspoon Italian seasoning 2 tablespoons olive oil 4 garlic cloves minced 1 cup chicken broth 1 cup heavy cream 1/2 cup grated parmesan cheese 1/2 cup sun-dried tomatoes chopped 2 cups fresh spinach Fresh basil optional, for garnish
Season chicken breasts with salt, pepper, and Italian seasoning.
Optional: Sear chicken in olive oil in a skillet for 2-3 minutes per side until browned.
Place chicken in the crockpot. Add minced garlic, chicken broth, and sun-dried tomatoes.
Cook on low for 5-6 hours or on high for 2-3 hours, until chicken is tender.
Stir in heavy cream and parmesan cheese 30 minutes before the cooking time ends.
Add fresh spinach in the last 15 minutes and stir gently until wilted.
Garnish with fresh basil if desired and serve hot.
