Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • Fresh basil optional, for garnish

Instructions
 

  • Season chicken breasts with salt, pepper, and Italian seasoning.
  • Optional: Sear chicken in olive oil in a skillet for 2-3 minutes per side until browned.
  • Place chicken in the crockpot. Add minced garlic, chicken broth, and sun-dried tomatoes.
  • Cook on low for 5-6 hours or on high for 2-3 hours, until chicken is tender.
  • Stir in heavy cream and parmesan cheese 30 minutes before the cooking time ends.
  • Add fresh spinach in the last 15 minutes and stir gently until wilted.
  • Garnish with fresh basil if desired and serve hot.
