Pomegranate and Pistachio Couscous Salad

Ingredients
  

  • 1 cup couscous 🍚
  • 1/2 cup pistachios chopped or whole 🌰
  • 1/2 cup pomegranate seeds 🍊
  • 1/4 cup olive oil 🌿
  • 2 tbsp lemon juice 🍋
  • 1 tbsp honey 🍯
  • 1/4 tsp ground cumin 🌱
  • Salt & pepper to taste 🧂
  • Fresh parsley chopped, for garnish 🌿

Instructions
 

  • Cook couscous: Bring 1 1/4 cups water to a boil. Add couscous and a pinch of salt. Cover, remove from heat, and let sit for 5 minutes. Fluff with a fork.
  • Toast pistachios: Toast pistachios in a small pan over medium heat for 2-3 minutes. Let cool.
  • Make dressing: Whisk together olive oil, lemon juice, honey, cumin, salt, and pepper.
  • Assemble salad: In a large bowl, combine couscous, pistachios, pomegranate seeds, and parsley. Toss with dressing.
  • Serve: Garnish with extra parsley, pistachios, and pomegranate seeds. Enjoy!
