Ingredients
  

  • For the crust:
  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 2 tbsp sugar
  • For the cheesecake filling:
  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 tbsp all-purpose flour
  • 2 tbsp red food coloring
  • For the topping:
  • Whipped cream cheese frosting store-bought or homemade
  • Red velvet cake crumbs sprinkles, or edible glitter (optional, for garnish)

Instructions
 

  • Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until everything is evenly coated. Press the mixture into the bottom of a mini muffin tin (12 cups) to form the crust. Bake for 5 minutes to set, then remove from the oven and let it cool.
  • Make the cheesecake filling: In a mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy. Add in the egg and flour, continuing to beat until everything is well combined. Mix in the red food coloring until the batter turns a bright red.
  • Fill the muffin tin: Spoon the red velvet cheesecake filling into each muffin cup, filling it almost to the top. Be careful not to overfill, as the cheesecake bites will rise slightly during baking.
  • Bake: Bake the cheesecake bites at 325°F (163°C) for 12-15 minutes, or until the edges are set and the center is slightly jiggly. Allow the bites to cool for 10 minutes in the pan.
  • Chill: Transfer the mini cheesecakes to the fridge and chill for at least 2 hours, or until fully set.
  • Decorate: Once chilled, top each cheesecake bite with a small dollop of whipped cream cheese frosting. Garnish with red velvet cake crumbs, sprinkles, or edible glitter for a festive touch.
  • Serve: Serve immediately or store in an airtight container in the refrigerator for up to 3 days. Enjoy these delicious, bite-sized treats at your next party or special occasion!
