Boil the Pasta:
Bring a large pot of salted water to a boil.
Add the bow tie pasta and cook according to package instructions until al dente. Drain and set aside, saving 1 cup of pasta water.
Brown the Sausage:
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Remove sausage from casing and crumble into the skillet. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if needed.
Add Garlic and Onion:
Add minced garlic and diced onion to the sausage.
Sauté for 2-3 minutes until the garlic becomes fragrant and the onion softens. Optionally, add red pepper flakes for a spicy kick.
Make the Sauce:
Add drained diced tomatoes, heavy cream, oregano, and basil to the skillet.
Stir to combine and let the mixture simmer for 3-4 minutes. Season with salt and pepper to taste.
If the sauce is too thick, add some reserved pasta water to adjust the consistency.
Combine Pasta and Sausage:
Add the drained pasta to the skillet, tossing to coat the pasta with the sauce and sausage.
Allow it to cook together for 2-3 minutes, adding more pasta water if needed.
Serve and Garnish:
Serve the pasta on plates and top with freshly grated Parmesan cheese.
Garnish with fresh basil or parsley for a vibrant, fresh finish.
