Ingredients
  

  • For the Pasta:
  • 12 oz bow tie pasta farfalle
  • Salted water for boiling
  • For the Sausage:
  • 1 lb Italian sausage mild or spicy, based on preference
  • 1 tbsp olive oil if needed for browning
  • 3 cloves garlic minced
  • 1/2 cup onion diced
  • 1/2 tsp red pepper flakes optional for heat
  • For the Sauce:
  • 1 can 14 oz diced tomatoes, drained
  • 1/2 cup heavy cream or milk for a lighter option
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • For Garnish:
  • Freshly grated Parmesan cheese
  • Fresh basil or parsley chopped

Instructions
 

  • Boil the Pasta:
  • Bring a large pot of salted water to a boil.
  • Add the bow tie pasta and cook according to package instructions until al dente. Drain and set aside, saving 1 cup of pasta water.
  • Brown the Sausage:
  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Remove sausage from casing and crumble into the skillet. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if needed.
  • Add Garlic and Onion:
  • Add minced garlic and diced onion to the sausage.
  • Sauté for 2-3 minutes until the garlic becomes fragrant and the onion softens. Optionally, add red pepper flakes for a spicy kick.
  • Make the Sauce:
  • Add drained diced tomatoes, heavy cream, oregano, and basil to the skillet.
  • Stir to combine and let the mixture simmer for 3-4 minutes. Season with salt and pepper to taste.
  • If the sauce is too thick, add some reserved pasta water to adjust the consistency.
  • Combine Pasta and Sausage:
  • Add the drained pasta to the skillet, tossing to coat the pasta with the sauce and sausage.
  • Allow it to cook together for 2-3 minutes, adding more pasta water if needed.
  • Serve and Garnish:
  • Serve the pasta on plates and top with freshly grated Parmesan cheese.
  • Garnish with fresh basil or parsley for a vibrant, fresh finish.
