Slow Cooker Creamy Tuscan Chicken Orzo

This recipe features tender chicken, creamy orzo pasta, and a rich, flavorful sauce with sun-dried tomatoes, spinach, and garlic, all cooked to perfection in a slow cooker.

Ingredients
  

For the Chicken:

  • 4 boneless skinless chicken breasts (or thighs)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • ½ cup sun-dried tomatoes chopped
  • 1 cup heavy cream or half-and-half
  • ½ cup grated Parmesan cheese

For the Orzo and Finishing Touches:

  • 1 cup uncooked orzo pasta
  • 2 cups fresh spinach leaves
  • Additional Parmesan cheese optional, for garnish
  • Fresh parsley optional, for garnish

Instructions
 

  • Season chicken with salt, pepper, and Italian seasoning. Place in the slow cooker.
  • Add minced garlic, sun-dried tomatoes, and chicken broth. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  • Remove chicken, shred it with two forks, and return to the slow cooker.
  • Stir in heavy cream and Parmesan cheese until creamy.
  • Add uncooked orzo, cover, and cook on high for 20-30 minutes until tender.
  • Stir in spinach until wilted.
  • Serve hot, garnished with Parmesan and parsley if desired.
