Slow Cooker Creamy Tuscan Chicken Orzo
This recipe features tender chicken, creamy orzo pasta, and a rich, flavorful sauce with sun-dried tomatoes, spinach, and garlic, all cooked to perfection in a slow cooker.
For the Chicken: 4 boneless skinless chicken breasts (or thighs) 1 teaspoon salt ½ teaspoon black pepper 1 teaspoon Italian seasoning 2 cloves garlic minced 1 cup chicken broth ½ cup sun-dried tomatoes chopped 1 cup heavy cream or half-and-half ½ cup grated Parmesan cheese For the Orzo and Finishing Touches: 1 cup uncooked orzo pasta 2 cups fresh spinach leaves Additional Parmesan cheese optional, for garnish Fresh parsley optional, for garnish
Season chicken with salt, pepper, and Italian seasoning. Place in the slow cooker.
Add minced garlic, sun-dried tomatoes, and chicken broth. Cover and cook on low for 4-5 hours or high for 2-3 hours.
Remove chicken, shred it with two forks, and return to the slow cooker.
Stir in heavy cream and Parmesan cheese until creamy.
Add uncooked orzo, cover, and cook on high for 20-30 minutes until tender.
Stir in spinach until wilted.
Serve hot, garnished with Parmesan and parsley if desired.
