Crockpot Cheesy Chicken Broccoli Rice

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 packet ranch dressing mix dry seasoning
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup chicken broth
  • 1 1/2 cups uncooked white rice
  • 3 cups fresh broccoli florets
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream optional
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

  • Season the Chicken: Sprinkle salt, pepper, garlic powder, and ranch dressing mix over the chicken breasts.
  • Mix the Sauce: In a bowl, combine the cream of chicken soup, chicken broth, sour cream (optional), and ranch seasoning.
  • Layer in Crockpot: Add uncooked rice to the bottom of the Crockpot. Place the seasoned chicken breasts on top. Pour the sauce mixture over the chicken and rice.
  • Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours.
  • Add Broccoli: 30 minutes before the cooking time is up, stir in fresh broccoli florets.
  • Shred Chicken: Once cooked, remove the chicken and shred with two forks, then return it to the Crockpot.
  • Add Cheese: Stir in shredded cheddar cheese until melted and combined.
  • Serve: Spoon the cheesy chicken, rice, and broccoli onto plates and enjoy!
