  • 1/4 cup breadcrumbs optional, for extra crunch
  • 1 tsp dried oregano
  • 1 tsp dried parsley plus more for garnish
  • Salt and pepper to taste
  • 1 lemon for zest and wedges

  • Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure the shrimp roast quickly and evenly.
  • Prepare the Shrimp: In a bowl, combine the peeled and deveined shrimp with olive oil, minced garlic, oregano, parsley, salt, and pepper. Toss the shrimp well to coat them evenly in the seasoning mixture.
  • Coat with Parmesan and Breadcrumbs: Add the grated parmesan cheese and breadcrumbs (if using) to the shrimp. Toss gently to ensure each shrimp is coated with the parmesan and breadcrumbs, creating a cheesy crust.
  • Arrange the Shrimp: Line a baking sheet with parchment paper or lightly grease it with oil. Arrange the shrimp in a single layer on the baking sheet, ensuring they are not overlapping for even cooking.
  • Roast the Shrimp: Roast the shrimp in the preheated oven for 8-10 minutes, or until they turn pink and opaque, and the parmesan has formed a crispy, golden layer.
  • Serve and Garnish: Once the shrimp are roasted, remove them from the oven and transfer to a serving platter. Garnish with freshly chopped parsley and a squeeze of lemon juice for a fresh, zesty touch. Serve with lemon wedges on the side for extra flavor.
